This meal is very tasty as well as very healthy – makes a perfect one-dish meal any night of the week. The recipe is also quite versatile. Make it as spicy or mild as you like, and include your own choice of vegetables depending on exactly what you have on hand. While a lot of Thai noodles meals are made with rice noodles, sometimes wheat and egg noodles are also used (a Chinese impact), so feel free to utilize either (if utilizing rice noodles, just make sure not to over-cook them).
